Last week my daughter made us some mediterranean fish stew. It was lovely, but I forgot to ask her for the recipe, so I decided to have a go myself, making it up as I went along. having been shopping with her for the ingredients, I had a pretty good idea what goes in it, but you can vary it to suit yourself.

1lb any white fish
1 tin chopped tomatoes
two or three cloves garlic
chopped onion
chopped courgette
1 carrot, chopped
paprika pepper to taste

I added some french beans, chopped up quite small and asparagus. I used 1 tspn paprika, but it wasnt enough, so depending how spicy yopu like your food, you can add more, or chilli powder instead.

Fry the onion in a little oil. Add the garlic and fry wekk, but not browned. Add the courgette and other vegetables. Cook lightly,

Add the tomatoes and the fish. Cook till the fish is cooked through (about 15 minutes).

Add the paprika, stir and serve.

We served ours with new potatoes, but it would work well with rice or pasta too.
