The old adage 'use it up, dont throw it out' has come to the fore recently.

On Sunday we had liver and bacon casserole for dinner. There was too much liver, but not really enough for a second meal. So rather than have it go to waste (or eat it all in one meal when we didnt need it), I 'created' a concoction that actually worked:

First, I fried some onion and two slices of bacon, chopped up. I added some veggies - courgette, carrots, peas, celery. Then I copped up the remainder of the liver into tiny pieces and put that in. Then some water and gravy mix and served over rice. Hubby said it reminded him of those chinese takeaway meals you sometimes get, so he was happy and the liver wasnt wasted.

Here's one for using up the spare Brussels Sprouts. There always seem to be plenty of them around Christmas.

Take the basic recipe for Cauliflower Cheese and use the Brussels Sprouts instead of the cauliflower. Add some leeks and a bit of black pepper.

I like the Brussels Sprouts idea but not sure anyone else in the family would - I have some teenagers who eat plenty of greens as long as they are broccoli or lettuce but not great at other things green.

One of my two is also vegetarian which makes cooking very complicated at times, - she doesn't like mushrooms and isn't really very good on lots of veggie dishes. I do try and vary things, and the vegetarian will eat some kinds of fish. I am supposed to have a low-fat diet so I shouldn't be putting lots of cheese onto my veggie dishes either!

My girls do cook occasionally - the youngest likes making cakes. But usually they are busy with homework when I am cooking evening meals.

Really useful skill baking. Made my first Eve's Pudding this week with homegrown, just picked apples.
