Scottish recipes Empty Scottish recipes

Not sure if this is really a Scottish recipe, but we came across it at a restaurant in Scotland (Nairn, to be precise) during the summer. It really is very simple:

Onion, chopped (you can use leek if you prefer)
carrot, chopped
courgette, chopped
cherry tomatoes, halved or quartered
chorizo (optional, if you want a vegetarian version, you can leave this out)
1 tin haricot or black eye beans
1 tin chopped tomatoes
If you like, you can spice it up with the addition of some chopped chillis or 1tspn chilli powder.

Fry the onion or leek lightly in a little oil. Add the other ingredients and cook till heated through.

Serve on a bed of rice, with garlic bread.
